Amish Peanut Butter

One of the best things about visiting Amish country,in Holmes county Ohio, is the food. Amish cheeses, Trail bologna, wedding chicken,homemade stuffing, and melt in your mouth dinner rolls made from scratch, those are the tastes that remind me of the place I grew up.
There are an overwhelming amount of Amish restaurants in Holmes county that recreate those tastes I remember from family reunions and holiday celebrations. One of the best is Mrs. Yoder's Kitchen in Mt. Hope. The food is wonderful, and always served with the best dinner rolls.
Rolls are served with real butter, and a spread called Amish peanut butter. Amish peanut butter can also be purchased from several companies that specialize in Amish foods, but why buy something that is easily made at home?
Amish Peanut Butter
2 1/2 C brown sugar
1 1/4 C water
1/4 C corn syrup
Boil 10-15 minutes. Cool off then add 3/4 quart of marshmallow cream and 20 ounces peanut butter.
This does make a rather large batch. It stores well in a sealed container, but making a half batch works well too.
If you are visiting Amish country in Ohio, I highly recommend a meal at Mrs. Yoder's. If you aren't in the area, but want a sweet little taste of Holmes county, make up a batch of Amish peanut butter and serve it on some homemade bread. You'll enjoy every bite!
