Apple crisp recipe from Connecticut

This recipe comes from a Connecticut diner where we stopped during a trip from New Jersey to the Cape. It was raining heavily and the warm apple crisp tasted heavenly.

Apple crisp recipe

I had not given much thought to the apples I used for baking, as long as they were cooking apples, before this time. Since then, I love to try different varieties. The flavor changes!

Ingredients

Filling  
4 cup    sliced Cortland apples  
1/2 cup    sugar  
1/2 tsp    cinnamon  
 
Topping  
1 cup    brown sugar  
1 cup    rolled oats  
1/4 cup    chopped walnuts  
1 cup    butter  
1 1/4 cup    flour  
1/2 tsp    salt  

Procedure

  1. Preheat oven to 375° F (180° C).
  2. Mix apple slices with sugar and cinnamon. Place then at the bottom of a greased baking pan.
  3. Combine brown sugar and sifted flour, oats, nuts and salt in a bowl. Cut and rub in butter as for pastry. When the pastry is ready, sprinkle over the apples.
  4. Bake a 375° F (180° C) for 40 minutes or until the top is crisp and brown, and the apples cooked.

Servings: 6
Yield: 5 to 6
Preparation time: 20 minutes
Cooking time: 40 minutes

Cooking Tips

  • Use a 10" x 6" (25 cm x 18 cm) rectangular baking pan, it would cook fast and even.
