Grilled Swiss cheeseburger with sliced mushrooms from Kansas

Although chili has been recognized is as a Texan dish, Cincinnati has a reputation for it. Only Some Greek cook adapted the traditional Texan recipe adding flavors from the Mediterranean region. The chili is traditionally served over pasta or over a hot dog.

It has become the local fast food and there are restaurant chains in the area specializing in this kind of chili. You'll hear talk of one, two, three or more ways meaning a bowl of chili only, chili over pasta, chili over pasta topped with cheese, and sliced onions, extra beans, and others for four, five or six-way.

Grilled Swiss cheeseburger with sliced mushrooms recipe

As Kansas produces quantity and quality of beef, you can use some top ground beef to prepare gourmet burgers. Kansans love their barbecues and you will be close to the true food spirit of the land.

Ingredients

USA Imperial  
1 lb    lean ground beef  
2 Tbs    ketchup  
2 Tbs    Worcestershire sauce  
1/2 tsp    salt  
1 dash    pepper  
2 Tbs    margarine  
1 cup    fresh mushrooms, washed and sliced  
4   hamburger rolls, split  
3/4 cup    shredded Swiss cheese  
 
Metric  
500 g   lean ground beef  
30 ml   ketchup  
30 ml   Worcestershire sauce  
2 g     salt (about 1/2 tsp)  
1 dash    pepper  
50 g     margarine  
150 g   fresh mushrooms, washed and sliced  
4   hamburger rolls, split  
100 g cup    shredded Swiss cheese  
 

Procedure

  1. Put the beef in a bowl, add ketchup, Worcestershire sauce, salt, and mix vigorously. Shape the flavored meat into four patties, 1-inch thick approximately, and place the patties on a broiling pan.
  2. Broil or grill 4 to 5 inches from the heat source for about 8 minutes on each side -no pink meat should remain. Once done, remove from the heat and allow to stand for 10 minutes. If using the broiler, turn it off.
  3. Preheat the frying pan on medium heat with the oil. Sauté the mushrooms for 5-6 minutes or until cooked.
  4. Use a second broiling pan to assemble the burgers. For each, place a burger on top of the bottom half of the roll. Top with shredded cheese and cooked mushrooms. Place the top half of the roll upside down by the side.
  5. Broil only until the cheese melts and the rolls are lightly toasted.

Cooking Tips

Remember to preheat the broiler each time.

Grilled onion slices or bacon also make great burger toppings. Use in addition to mushrooms and cheese or instead of, and, of course, feel free to add such traditional toppings as slced tomatoes, lettuce or raw sliced onion.
