Angel hair with shrimp sauce Italian style

Many cities in Italy are near the sea and the Italians are well-known for their centuries-old tradition of fishing. They're also well known, obviously, for the use of pasta in cooking. Many excellent recipes have evolved from those twin circumstances. When the seafood is fresh, these two make for excellent partners.

Italian angel hair with shrimp sauce recipe

Angel hair cooks fast and shrimp is also easy, making this an ideal fast food that is also good.

Ingredients

USA  
8 oz   angel hair or capellini  
1 lb     medium sized shrimp  
5 cloves     garlic  
1/4 cup   white wine  
3/4 cup   water  
2 tsp   cornstarch  
1/3 cup   fresh basil  
2 Tbs   olive oil  
 
Metric  
225 g     angel hair or capellini  
450 g   medium sized shrimp  
5 cloves     garlic  
75 ml   white wine  
175 ml   water  
2 tsp   cornstarch  
1/3 cup   fresh basil  
30 ml   olive oil  
 

Procedure

  1. Finely chop the garlic and the basil. Remove any tails from the shrimp, but don't chop. Mix the cornstarch with the water.
  2. Boil the pasta in plenty of water. The key is to provide enough space around the pasta to allow even heating and an even coating of starch, get the pasta is al dente -firm, not overdone.

While you are waiting...

  1. Place the garlic and olive oil into a sauce pan and saute for a couple of minutes, then add the shrimp and saute for 3 minutes. Add the white wine and cook for 2 minutes.
  2. Add the water with cornstarch and the basil. Simmer for 8-10 minutes.
  3. Drain the pasta, but don't rinse. Then pour the sauce over the still hot pasta and serve. Ready in half an hour and a true taste treat.

Cooking Tips

It is easy to give this recipe some color by adding 2 Tbs tomato sauce with the water.

To make angel hair fishermen style, substitute all garlic with 1 medium sized onion, basil with parsley and add 1 tsp paprika just before adding the wine.
