Johnny Mazzetti from Panama

This recipe comes from the canal Construction Days. Some consider it original from the Canal Zone.

Johnny Mazzetti recipe

Large quantities of this Panamian delice. Just right to organize a Panama themed party.

Ingredients

USA Imperial  
1 1/2 lb    ground beef  
2 lb    ground pork  
6   chopped onions  
6   garlic cloves  
2 cups    sliced sweet peppers  
5 cups    chopped celery  
2   large cans tomatoes  
2   cans tomato paste  
2   cans tomato soup  
3 cups    mushrooms with liquid  
2 cups    sliced stuffed olives  
2   cans pimientos, chopped  
1   bunch chopped parsley  
5 cups    grated American cheese  
1 1/2 lb    wide egg noodles  
4 Tbs    oil  
1 Tbs    ground pepper  
3   bay leaves  
  salt to taste

700 g     ground beef  
900 g   ground pork  
6   chopped onions  
6   garlic cloves  
  sweet peppers, sliced  
250 g   celery, chopped  
2   large cans tomatoes  
2   cans tomato paste  
2   cans tomato soup  
300 g     mushrooms with liquid  
200 g     sliced stuffed olives  
2   cans pimientos, chopped  
1   bunch chopped parsley  
5 cups    grated American cheese  
750 g     wide egg noodles  
60 ml   oil  
1 Tbs    ground pepper  
3   bay leaves  
  salt to taste  
 

Servings: 24

Procedure

  1. In a large skillet, saute the beef and pork in the oil. While the meats are still slightly pink add the garlic cloves, onions and peppers. Fry for 2 minutes. Add the remaining ingredients, except the noodles and cheese. Simmer for 5 minutes over a low heat.
  2. Cook and drain noodles, follow the directions the back of the package.
  3. Heat oven to 275°F (130°C). Lightly grease a large, deep baking pan.
  4. Layer the noodles and meat mixture, starting with the noodles. Sprinkle the grated cheese on he top layer.
  5. Bake in a slow oven for 2 hours.

Johnny Mazzetti freezes very well and we have been told that it tastes better every time it is re-heated. If you were not planning a Panama themed party, don't worry, prepare the amount given and freeze in smaller portions to have home made ready meals.
