Recipe for menestra the Navarran style

Vegetables let you have delicious low calorie dishes. These Navarran vegetables are low in calories. This recipe, though, has a slightly higher percentage of calories from fat than recommended, even if it is healthy olive oil. Combine it with grilled fish or meat to have a healthy, perfectly balanced menu.

Navarran menestra recipe

First quality healthy vegetables are the main ingredients for this recipe.

Ingredients

2 cups    quartered artichoke hearts  
2 cups    diced carrots  
2 cups    shelled peas  
2 cups    cut green beans, 1 in pieces  
2 cups    sliced mushrooms  
 
1/4 cup    olive oil  
1   onion, medium size, minced or finely chopped  
2   leeks, in julienne  
1   slice ham, preferably Serrano, in strips (optional)  
2   eggs, hard boiled  

Procedure

  1. Take water to the boil in a pan. When ready, add carrots and peas first; mushrooms and beans five minutes later. Boil for five minutes. Strain the vegetables keeping the liquid to use later.
  2. Heat the oil in another pan. Saute onion and leek for five minutes on a low heat; they will become translucent. Set the heat to medium; add the ham and saute for another two minutes. Add 1 cup of the cooking liquid previously reserved and take to boil. Add the vegetables to the pan, season, and cook for a further five minutes.
  3. Serve on a plate, garnished with triangles of fried bread and hard boil egg quarters.
