Description

Serve beef brisket can with boiled potatoes or potato mash - with no milk, cheese, or butter.

Ingredients

3Poundbeef brisket
3Tablespoonolive oil
1⁄2Cuponion (chopped)
2Cupwater
  salt (to taste)
  pepper (to taste)
  parsley (fresh parsley leaves, chopped)

Instructions

  1. Tie the brisket into a compact shape.
  2. Take a deep kettle and cover the bottom with 2 Tbs oil, add the chopped onion, place the brisket over the oinon, pour 1 Tbs oil over, cover and let it stand for 1 hour to marinate.
  3. After an hour, add the boiling liquid.
  4. Cover the kettle and let the beef simmer for 2-1/2 hours or until tender.
  5. Season with salt and pepper to taste 30 minutes before it is done.
  6. Once the brisket is cooked, place on platter and sprinkle finely chopped parsley to garnish.

Notes

Check the brisket while cooking and add a little more boiling water if required.

Substitute boiling water with boiling beef or chicken broth for more flavor.

If preparing this recipe for Hanukkah or any Jewish celebration, remember to use kosher food right up to kosher salt.
