French garlic vinaigrette

Ingredients

garlic (fineli chopped)
1 t
salt
3 T
red wine vinegar
1 pn
pepper (freshly ground)

olive oil

Instructions

  1. Use mortar and pestle to mash the garlic. Mix in salt. Add vinegar and pepper, stirring until smooth.
  2. Place the mixture in a small jar with a tight-fitting lid. Add oil, screw on lid, and shake until the vinaigrette is well blended.

Notes

Alternatively, place chopped garlic into a small bowl and mash it with the back of a spoon.
