- Use mortar and pestle to mash the garlic. Mix in salt. Add vinegar and pepper, stirring until smooth.
- Place the mixture in a small jar with a tight-fitting lid. Add oil, screw on lid, and shake until the vinaigrette is well blended.

Alternatively, place chopped garlic into a small bowl and mash it with the back of a spoon.
