Grilled cheeseburger with mushrooms from Kansas

As Kansas produces quantity and quality of beef, you can use some top ground beef to prepare gourmet burgers. Kansans love their barbecues and you will be close to the true food spirit of the land.

Ingredients

1 lb beef (lean beef, ground or minced)
1⁄2 t salt
1 pn pepper
1 c mushroom (fresh mushrooms, washed and sliced)
3⁄4 c cheese (shredded Swiss cheese)
4 bread roll (burger rolls, split)

Instructions

Put the beef in a bowl, add ketchup, Worcestershire sauce, salt, and mix vigorously. Shape the flavored meat into four patties, 1-inch thick approximately, and place the patties on a broiling pan.

Broil or grill 4 to 5 inches from the heat source for about 8 minutes on each side - no pink meat should remain. Once done, remove from the heat and allow to stand for 10 minutes. If using the broiler, turn it off.

Preheat the frying pan on medium heat with the oil. Sauté the mushrooms for 5-6 minutes or until cooked.

Use a second broiling pan to assemble the burgers. For each, place a burger on top of the bottom half of the roll. Top with shredded cheese and cooked mushrooms. Place the top half of the roll upside down by the side.

Broil only until the cheese melts and the rolls are lightly toasted.

Notes

Remember to preheat the broiler each time.

Grilled onion slices or bacon also make great burger toppings. Use in addition to mushrooms and cheese or instead of, and, of course, feel free to add such traditional toppings as sliced tomatoes, lettuce or raw sliced onion.
