Orzo with brown butter

Ingredients

8 oz
orzo (dry weight)
1⁄3 c
butter
3 T
Kefalotiri cheese (grated)

Instructions

  1. Cook orzo according to package. Drain and keep warm.
  2. Melt butter in a small pan over medium-high heat and cook until it turns light brown. Don't overcook.
  3. Place hot, drained orzo in a serving bowl. Pour butter and grated cheese over orzo and stir to combine. Serve immediately.

Notes

Start preparing the brown butter sauce while the pasta is cooking, with a little practice, the timing will be perfect.

If you don't have it, substitute 3 tablespoons Kefalotiri cheese with the same amount Parmesan cheese.

Margarine is a perfect substitute for butter.

Orzo is a type of pasta shaped like a grain of barley. If you don't have it, use the brown butte sauce with any small pasta shape or white rice.
