Surf 'n' Turf from Australia

Surf and turf always offers the best of sea and land, fresh prawns and juicy steak in this case, made more appealing by the tangy beer sauce on the side. Serve with chunky oven fries.

Ingredients

1 T butter
1 onion (sliced)
1 clv garlic (peeled and finely chopped)
1 chili pepper (or to taste, finely sliced red chili)
1⁄2 c cream
1 scallion (salad onion or scallion, finley sliced)
12 oz beef (two steaks)
4 prawns (large, cooked and with the shell on)

Instructions

Prepare the beer sauce

Heat olive oil in a pan. Fry softly the onion and chili for 2 minutes. Add garlic and cook for 2-3 minutes more. When onion is soft, stir in cream and lager. Simmer gently for 8-10 minutes.

Prepare steaks and seafood

Grill or pan fry the steaks to your taste.

Heat butter and olive oil in a heavy pan. Add the shrimps and lime juice - it will splatter - and cook for 1-2 minutes.

Garnish and serve

Arrange the steaks on pre-heated plates. Pour over the beer sauce and place shrimp on top. Serve with chunky oven fries or baked potato wedges on the side.

Notes

The zesty beer and cream sauce will go well with the local game meat - kangaroo or emu - so it would be worth to try it, if you can get hold of any of them.
