Swagman's damper from Australia
Description
A swagman would have made this bread from flour and water and cook it on an open fire.
Ingredients
1⁄3 Cup flour (self-raising) 1 Pinch salt 10 Tablespoon water
Instructions
- Preheat the oven to 400° F (200° C).
- Sift flour and salt into a bowl. Add water, a little at a time, and mix to make it into dough. Stop adding when the dough becomes one piece.
- Grease 2 small cake pans, ramekins or soufflé dishes (150 ml / 1/3 cup) and line them with grease proof paper. Fill them with dough. Brush with milk and dust with flour.
- Bake in the center of oven on a baking sheet for 25-30 minutes.
Notes
If you don't have self-raising flour, substitute it with 1/3 cup (160 g) all purpose flour and 1 tsp baking powder.
Substitute water with milk for enhanced flavor.
