Rice with Almonds and Raisins

White rice with almond and raisins will equally graze tables from Morocco to Egypt. Rice is a staple food in the Egyptian diet.

Rice with almonds and raisins recipe

White rice is often flavored with nuts and raisins to give it variety. Ghee is the cooking fat of chioce for this rice dish.

Ingredients

USA  
1½ cups   long grain rice, washed  
2 Tbs   ghee  
2½ cups   water or broth  
    salt  
    pepper  
1/2 cup   almonds  
1/2 cup   raisins  
 
Metric  
200 g   long grain rice, washed  
30 ml   ghee  
600 ml   water or broth  
    salt  
    pepper  
75 g   almonds  
75 g   raisins  

Procedure

  1. Heat ghee in a pan and cook rice for 15 minutes, stirring continuously.
  2. Add liquid, salt and cinnamon. Bring to the boil.
  3. Lower heat and cook until rice is done and liquid dried out.
  4. Roast almonds and raisins in a separate pan with a little butter. Sprinkle over the rice.

Serving size: 1/6 of the recipe
