Surf 'n' Turf from Australia

If you were food shopping in Australia soon you’ll realize that the word to describe produce is fresh. From seafood in every shape and size, local fruit and vegetables, to beef and, for sure, lamb. In modern Australia, this surf ‘n’ turf dish could be easily prepared using kangaroo fillet instead of beef.

Aussie Surf 'n' Turf recipe

Surf and turf always offers the best of sea and land, fresh prawns and juicy steak in this case, made more appealing by the tangy beer sauce on the side. Serve with chunky oven fries.

Ingredients

USA Imperial  
for the meat and seafood  
2   sirloin or fillet mignon steaks  
4   cooked large shrimp or prawns, shells on  
1 tbs    butter  
1 tbs    olive oil  
1 tbs    lime juice  
for the sauce  
2 tbs    olive oil  
1   onion, sliced  
1 clove    garlic, peeled and finely chopped  
1   red chili, finely sliced  
½ cup    cream  
½ cup    lager  
1   spring, scallion or salad onion, sliced  
 
Metric  
for the meat and seafood  
2   sirloin or fillet mignon steaks  
4   cooked large shrimp or prawns, shells on  
15 ml     melted butter  
15 ml     olive oil  
15 ml     lime juice  
for the sauce  
30 ml     olive oil  
1   onion, sliced  
1 clove    garlic, peeled and finely chopped  
1   red chili, finely sliced  
125 ml     cream  
125 ml    lager  
1   spring, scallion or salad onion, sliced  
 

Procedure

Prepare the beer sauce

Heat olive oil in a pan. Fry softly the onion and chili for 2 minutes. Add garlic and cook for 2-3 minutes more. When onion is soft, stir in cream and lager. Simmer gently for 8-10 minutes.

Prepare steaks and seafood

Grill or pan fry the steaks to your taste.

Heat butter and olive oil in a heavy pan. Add the shrimps and lime juice -it will splatter- and cook for 1-2 minutes.

Garnish and serve

Arrange the steaks on pre-heated plates. Pour over the beer sauce and place shrimp on top. Serve with chunky oven fries or baked potato wedges on the side.

Cooking Tips
