Swagman's damper from Australia

A swagman is a wandering laborer, though there are not so many now. A swagman would make this bread from flour and water and cook it on an open fire. This is an easy recipe to cook with kids when camping using small tin cake pans or even simple pans, lined.

A swagman would have made this bread from flour and water and cook it on an open fire.

Ingredients

USA Imperial  
1/3 cup     self raising flour  
pinch    salt  
10 Tbs   water  
 
Metric  
160 g    self raising flour  
pinch    salt  
150 ml    water  
 

Procedure

  1. Preheat the oven to 400° F (200° C).
  2. Sift flour and salt into a bowl. Add water, a little at a time, and mix to make it into dough. Stop adding when the dough becomes one piece.
  3. Grease 2 small cake pans, ramekins or soufflé dishes (150 ml / 1/3 cup) and line them with grease proof paper. Fill them with dough. Brush with milk and dust with flour.
  4. Bake in the center of oven on a baking sheet for 25-30 minutes.
