Swiss cherry bread pudding
Walking in the Swiss countryside, you would not fail to notice the abundance of cherry orchards. The cherry harvest comes around June or July every year, and the sweet cherries become preserves, pies, puddings, even Swiss candy.

Greasing first the baking dish with butter and sprinklin sugar on top gives this pudding a lovely, slightly caramelized crust.

Procedure
- Preheat oven to 350°F.
- Grease a medium-sized round baking dish with ½ tablespoon (15g) butter. Sprinkle 2 Tbs (25-30g) sugar.
- Place bread into a large bowl, pour over hot milk then add remaining butter and beat until smooth; incorporate remaining ingredients and blend thoroughly.
- Transfer mixture to prepared baking dish and bake for 40 minutes.
- Remove from oven and allow to cool slightly. Serve warm.

Cooking Tips
Reserve 4 cherry halves for decoration. Whip 1 cup heavy cream to soft peaks. Garnish each serving with whipped cream and top with a cherry half.
