Both sweet and hot peppers are part of the capsicum family.

Bell peppers are members of the nightshade family. You'll find them in all colors: yellow, orange, red and green. The yellow ones are the sweetest, while the green peppers have the sharper flavor. Choose always peppers with a firm flesh and shiny skin. Discard the seeds, white membranes and hard core.

Grill or broil whole peppers, washed, for 5-8 minutes at the highest setting, turning frequently, until the skin blackens -alternatively, place peppers in a pan and roast for 40-45 minutes at 400°F. Cover and leave them to cool for 15-20 minutes. Rub off the skin, remove seeds and wash. Use them to prepare a roasted pepper soup, roasted pepper and onion pie. For quick a roasted pepper side salad, sauté sliced garlic in olive oil and pour over the roasted pepper, cut into wide strips. Roasted pepper strips make a great garnish for a risotto or paella dish.
