Kitchuri, Indian meatless cuisine

Try kitchuri to give your body a rest from food overload or when you are looking for a quick, easy meal, a perfect example of vegetarian Indian cooking.

This is a dish prepared in Indian since the beginning of their cooking traditions. This recipe is said to be the inspiration for kedgeree, a rice and fish dish very popular in Scotland and England, first as a breakfast dish, now it is just popular.

Kitchuri recipe

If you were an Indian mother looking for a suitable meal for your toddler, kitchuri would likely be your choice. it is soft, easily digested and the young ones love the spiced flavor.

Ingredients

USA  
1 cup    basmati rice  
1/2 cup    red split lentils  
1   medium sized onion, finely chopped  
2 Tbs    ghee or vegetable oil  
1 tsp    pureed garlic  
1 tsp    grated ginger  
  salt  
1 pinch    turmeric

200 g   basmati rice  
100 g     red split lentils  
1   medium sized onion, finely chopped  
30 ml   ghee or vegetable oil  
1 tsp    pureed garlic  
1 tsp    grated ginger  
  salt  
1 pinch    turmeric  

Serves: about 4 people

Procedure

  1. Wash rice and lentils. soak for about 10 minutes in water.
  2. Heat ghee in a pan over a low heat. Fry onions, garlic and ginger until golden brown.
  3. Drain the rice and lentil mix and add to the pan. Cook for a couple of minutes, stirring frequently. Season with salt and turmeric.
  4. Pour boiling water to cover by half an inch and get it to a simmer.
  5. Cover and simmer over low heat for 9-15 minutes, until rice and lentils are cooked.
  6. Fluff the rice with a fork and serve.

Servings: 4
Yield: 4 to 5
