French style peas

Ingredients

2 c
peas (frozen)
4 leaf
lettuce
3  
shallots (or French onions)
1 spg
tarrago (or 1 Tbs fresh tarragon, chopped)
1 T
butter
1 t
salt

Instructions

  1. Wash lettuce leaves well and shake dry, cut in wide stripes. Peel onions and halve.
  2. Boil 3/4 cup of water in a pan with the salt. Add onions an lettuce leaves, cover and simmer for 10 minutes. Add frozen peas. Bring back to boil and simmer for a further 10 minutes, or until water is absorbed and peas tender.
  3. Drain. Discard tarragon sprig, if used.
  4. Transfer to a warm serving tray and sprinkle with water.

Notes

Use fresh peas when in season and frozen peas if fresh ones are not available.

Make this recipe dairy and milk free by substituting butter with 1-2 Tbs vegetable oil. Making it dairy free also makes it adequate for the most strict vegetarians.
