Fruit soup

If you miss the summer, take advantage fruit is present at the grocery store even out of season, and bring back the summer flavor by adding fruits from the warm season.

Ingredients

1 1⁄2 c strawberries (3/4 cup roughly chopped, 3/4 cup washed and ready to eat)
2 c tangerine (seedless, in segments)
1 c blueberries (washed)
1⁄2 c melon (diced)
1 kiwi (peeled, diced)
3⁄4 c sugar (2)
2 T liquor (strawberry, raspberry or orange flavored)
1⁄2 c wine (white wine, fruity and slightly sweet)
1⁄2 c water

Instructions

Dissolve sugar into 1/2 cup water. Add 1/2 cup of the sweetened water mixture to the white wine and strawberry liqueur. Marinate the chopped strawberries in this mixture overnight in the fridge.

Next morning, pass the marinade through a sieve to remove any bits. Add the rest of the fruit pieces to the liquid and chill thoroughly before serving.

Notes

It is best to prepare fruit soup with fresh fruit in season; however, frozen or canned fruit can be used if no fresh fruit is available. Often, the fruit soup is made with a mix of fresh and canned or frozen fruit.

The berry liqueur can be substituted with other fruit liqueurs - blackberry, orange, or your favorite.

Use a sweet and fruity white wine, try cider or champagne for a different flavor.
