Spinach Stew
A delicious North African dish, this one specifically being from Libya, that can be eaten hot or cold.
Ingredients
1 pk spinach (fresh)
1 t tomato paste
5 T tomato (chopped)
1 onion (peeled and chopped)
1 T rice
1 pn chili powder
1⁄4 t turmeric
Instructions
In a hotpan put the onions and meat until meat is seared.
Add the tomato paste, chopped tomatoes and spices, covering and cook for 45 minutes to 1 hour, stirring every 15 minutes.
When the meat is cooked add the spinach add rice until it is also cooked. Serve warm or leave to rest and serve cold.

Notes
Serve spinach stew with plain rice or flat bread.
Variations
Substitute meat with the same amount of chicken, skinless and boneless.
Substitute de meat with cooked chickpeas for a vegetarian spinach stew.
