Vinegared rice

Description

Vinegared rice is the base of the best liked nori sushi recipes. Serve topped with vegetables or fish, rolled with seaweed or in balls with some surprise stuffing.

Ingredients

1⁄4 c
rice vinegar
2 T
sugar
1 T
tamari
2 c
sushi rice
2 c
water

Instructions

  1. Put the rice and the water in a saucepan. Heat it on the stove until the water boils, then cover the pan and let the rice simmer for about 20 minutes.
  2. Meanwhile, measure the rice vinegar into a glass bowl. Stir in the sugar and tamari.
  3. Take the rice off the heat. Let it stand for about 10 minutes.
  4. Empty the cooked rice into a large, flat container. Slowly sprinkle the vinegar mixture over the rice, folding it in gently.

Notes

Tamari is Japanese soy sauce made from soy with little or no wheat, while shoyu is a sweeter Japanese soy sauce made from soy and wheat.

Substitute 1 Tbs tamari with 1 Tbs shoyu, consider adding a little less sugar, or any other soy sauce.

Soy intolerance? Substitute 1 Tbs tamari with 1 tsp salt. This substitution is also recommended for young children, when there is a history of allergy in the family.
